Bill: The Man Behind the Chocolate Man

After more than 20 years of making chocolates, teaching others and supplying local professionals with tools and products, chocolatier Bill Fredericks opened his own storefront and classroom last year.

His Lake Forest Park shop, Chocolate Man, sells all the raw materials needed for making chocolate, from cocoa butter and single-origin chocolate bars to molds, special tools and packaging. A longtime instructor at both North Seattle Community College and South Seattle Community College’s culinary programs, Fredericks also offers as many as 30 different hands-on classes at his shop at any given time, from basic to advanced: truffles, tempering, molding, sculpting, fruit and wine gels and kids’ classes.

And, if you really end up getting bit by the chocolate bug, you can rent Fredericks’ candy molds, tempering machines and chocolate fountain, so you can take your new hobby home.
