Tamara Murphy protégé Zephyr Paquette’s dream of opening a culinary incubator/restaurant was realized earlier this year with the launch of Skelly and the Bean. Early in the week, the space hosts aspiring chefs tinkering on cool projects; come hump day, dinner features Paquette’s updates on homey faves like tuna noodle casserole. Fans cluck over the sausage-stuffed chicken breast ($24) available on a rotating basis, and cheer the boozy Buttered Scotch Pudding ($8), created by pastry chef Kathleen Callahan. At weekend brunch, don’t miss the decadent duck confit biscuits and gravy.
